Brasswood Estate’s Warm Apple Cider



  • 10 medium apples (assorted), cut in eight pieces
  • 2 oranges, cut in eight pieces
  • 4-6 cinnamon sticks
  • 2 Tablespoons Whole Cloves
  • 1 whole nutmeg
  • 4 each Star Anise
  • Water, enough to completely cover the apples
  • (Optional – 1/2 cup brown sugar or maple syrup)


Stove Top

  1. Combine all ingredients in a stock pot
  2. High heat until it reaches a simmer, reduce to medium-low
  3. Simmer for about 2 hours or until the apples are soft all the way through
  4. Mash the apples with a whisk, spoon or potato masher
  5. Simmer for another 2 hours
  6. Strain all the solid fruit using cheese cloth or a fine-mesh strainer
  7. Serve with orange peel and cinnamon stick garnish

Yield: 4 quarts

Cook time: about 4 hours stove top, 6 hours crock-pot
