Oak Avenue Catering Uncle Willy Ancona’s Marinated Cracked Dungeness Crab



  • 1 bunch Italian Parsley – washed and chopped medium fine
  • 6 cloves Garlic – peeled and thinly sliced or minced
  • 1-2 teaspoons Crushed Red Chili Flakes – more if you like it spicy, less if you don’t
  • 1 teaspoon Dried Oregano
  • Micro planed zest and the juice of 2 Lemons – reserve half of the juice
  • 1 1/2 – 2 cups of Good quality Extra Virgin Olive Oil
  • Salt to taste


  1. Break down cooked and cooled crab, slightly pre-cracking shell with a mallet or muddler. Mix the crab with the chopped parsley, oregano, lemon zest, lemon juice and a good pinch of sea salt. Add the olive oil and lemon juice. Add half the lemon first and taste. Add more oil and lemon juice to suit your taste. It’s like a dressing for the crab. I think more dressing is better!
  2. Taste for seasoning. (Salt and chili flakes)
  3. Let marinade for 2 hours chilled and covered in refrigerator up to overnight.
  4. Let it set out for at least half an hour if the oil has coagulated.
  5. Serve with a nice crisp salad and Sparkling Wine.
  6. Use lots of sourdough to sop up the dressing!
